Timothys white chicken chili

Does any one have the original recipe for Timothys white chicken chili? I had it but lost it last year. Thanks.
I always think better with a full stomach.

Timothy’s White Chili

1 pound large white beans
8 cups chicken broth
2 cloves garlic, minced
2 medium onions, chopped
1 tablespoon oil
2 4-ounce cans mild green chilies, chopped
2 teaspoons ground cumin
1 ½ teaspoons oregano
¼ teaspoon ground cloves
¼ teaspoon cayenne pepper
4 cups cooked chicken breast, diced
3 cups grated Monterey Jack cheese
Salsa
Sour Cream

Combine beans, broth, garlic and half the onions in a large pot and bring to a boil. Reduce heat and simmer until beans are soft (2 hours or more), adding more water or broth as necessary.

In a skillet, sauté remaining onions in oil until tender. Add chilies and seasonings and mix thoroughly. Add to bean mixture. Add chicken and simmer 1 hour.

Serve topped with cheese, salsa and sour cream.

Serves 8 to 10

We've had this recipe for years and love it. I made it for Christmas day. I grilled the chicken outside first, which made it even better. I also like a little fresh cilantro sprinkled on it.

While I love Timothy's original recipe, I do like to change it up sometimes. I take out the clove and add Cavendar's Greek seasoning. I also kick it up by adding some habanero powder.

I grilled the chicken and switched the cloves to cavendars. WOW- made it even better. Thanks.
I always think better with a full stomach.

We love the stuff! We sprinkle it on fresh tomatoes, cottage cheese, steaks, popcorn, and deviled eggs. Yum!

When I put it on my popcorn at work, people seem to come from nowhere asking me what smells so good. :D

Great idea on the Calvendars in the chili, Doogy! I'll have to try that one (once my diet allows that much cheese again :wink:

BTW, they carry it at Paul's. That's how I was originally introduced to it: as a sample sprinkled on top of homegrown tomatoes. We do that frequently every summer now. Yumm!

I've got a pot of Timothy's white chili cooking right. I never bother with the sour cream or cheese on my Timothy's chili. I like it quite well that way and I am sure it's a lot's healthier for me. When Timothy's was still viable, I always ordered it there without the sour cream or cheese. They were more than happy to accomodate me. :)

For those who have tried it- how really good is this chili? I've unfortunately never had it at the restaurant, but I've heard good things. I'm looking for a white chicken chili recipe to take to Super Bowl party and I want it to be REALLY good.
