Deb,

I've got a pot of Timothy's white chili cooking right. I never bother with the sour cream or cheese on my Timothy's chili. I like it quite well that way and I am sure it's a lot's healthier for me. When Timothy's was still viable, I always ordered it there without the sour cream or cheese. They were more than happy to accomodate me.

It is really good and very chili-like. My only suggestion for the recipe that was given above, is to shred the chicken rather than dice it. That is how it was served at the restaurant and it gives it a chili texture that diced chicken doesn't.

Tim Barnes was a fabulous restaurateur and he always had interesting places, He is greatly missed.

To answer Deb, I've been making this for years... My recipe is written on an index card that is all grimy and smeared, but I still have it. I actually called the restaurant when it was still on Broadway and got the recipe.

Personally, I wouldn't call it "chili" but it is delicious. What's great about it is that you can vary the seasonings to adapt to your own taste. On a cold Saturday, it's the bomb with some jalepeno cornbread muffins.

SHRED the Chicken... Great suggestion. Big hit last weekend.

I made this for the Super Bowl after seeing it posted here - I shredded the chicken and followed some of Dan's recommended alterations - big big hit.
