Hi Lois,
This has been our favorite Hummus recipe for a long, long time.
3 cloves sliced garlic
a handful of parsley
2 scallions (cut into about 1 inch pieces)
3 cups cooked chick peas (or 2 of the 15-1/2 oz. cans rinsed and well drained)
6 TBSP tahini
6 TBSP fresh lemon juice
1 TBSP toasted coriander seeds
1 tsp sea salt (or to taste)
pinch cayenne and cumin to taste
1. Place garlic, parsley and scallions in blender or food processor and mince.
2. Toast the whole coriander seeds in a dry skillet until just sizzling, browned and aromatic. Remove and grind fine with mortar and pestle.
3. Add chick peas, tahini, lemon juice, salt and coriander seed to what is already in the blender. Puree to a thick paste
4. Season to taste with the cumin and cayenne (if you like) and adjust the salt if necessary.
5. Put it in a lidded container and chill (if you get that far and are not scarfing it down already
)
If we want a coarser hummus we just finely mince the ingredients and mix/mash together by hand.
We also like to drizzle a little bit of good EVOO on top, depending on your taste buds.
