I prefer the big fluffy dropped dumplings. This is the recipe that I have used the last two years.

I think the use of the chicken broth and the olive oil make the dish even richer tasting than my grandmother's recipe that I had used for years.

The inclusion of cornmeal makes for interesting taste and textural changes, again compared to my grandmother's version. I must admit that I still do use her dumpling recipe at times.

I use Bisquick for my dumplings. My grandfather liked his dumplings 'tough' so kneed the hell out of the dough before I drop them in chicken stock. My daughter, in a pinch, will use canned biscuit dough, quartering each biscuit before dropping into stock. Yeah, it's cheating but it does make OK dumplings.
