Cranberry Sauce

Disclosure: This is a recipe using Dumante, my employer. I truly hope you enjoy this product and may look for ways to cook with it. Another nut liqueur may be used in its stead, just try to find one close to the same proof, 56...

5 cups water
4 12 oz bag cranberries
2 cups Dumante
½ cup sugar

1 ½ tbs cornstarch
¼ cup water

Bring the first four ingredients to the boil. Strain through a sieve. Bring this liquid to the light boil. In another container, add the cornstarch and water and incorporate.. Thicken the sauce with this mixture. Add the ‘slurry’ (second two) to the sauce. Reduce the heat to incorporate. Chill. Serve.

The thing I enjoy about this recipe is that the nut character emerges on the very end, right before the finish. Sweet and sour followed by nutty goodness. Pretty complex and with great wow factor!
