Anyone have a good mussels recipe?

by Leann C » Fri Dec 04, 2009 12:18 pm

I'm having a few people over tonight. And I'm thinking about cooking some mussels. I'd like to do something along the lines of mussels cooked in wine & garlic. I'd love a recipe that will leave lots of garlicy broth that we can dip crusty bread into. (dangling prep. sorry)

That's a great basic recipe that you could add any or all of the following too...
Diced Tomatoes
Diced Ham
Some slices of Italian Sausage
Diced Bell Pepper
Diced Fennel
Fresh Basil
A dollop of Marinara Sauce
Some more Butter at the end of cooking.
Enjoy :D

Annemarie and I use the same recipe! So if I'm using it , it has to be foolproof because I can screw up a cardboard box! (At least when I'm trying to cook.) I will add to be sure and prep the mussels properly. Dump them in a big pot of cold saltwater and vigorously shake them every so often so they'll disgorge their mud and sand. Do this for about an hour. If you try to skip this step your pot broth will be sandy. Yech!
