Fresh herbs with Turkey.....

My husband is requesting fresh herbs on the turkey this year. To be honest i dont really work much with fresh herbs......cilantro is ALWAYS on hand here, but that is about it.

what goes well with turkey? ....poultry? from what i have read it is mainly rosemary, thyme, and sage. Do i just chop those all up together? or just use two of the three? i am making a breast and whole turkey and am going to try this on the breast.

What my favorite cook does is chop up fresh marjoram, thyme, and a touch of rosemary (too much can be too much), she then coats the birdie with olive oil, sprinkles on the herbs, salt and pepper and into the oven.

Remember to baste it with great aplomb.

I saw this on America's Test Kitchen a couple of weeks ago and this is how I'm preparing our turkey this year. I like the fact that there is some lemon zest in the herb paste. I love citrus with poultry. :D
