Thanksgiving Style Rolls to Freeze

by Eliza W » Mon Nov 16, 2009 3:59 pm

I'm looking for a recipe for very traditional, very mid-American dinner rolls that I can make this week and just thaw and re-heat on Thanksgiving.

I mostly aim for crusty, delicious rolls, and those are good, but this time, I want that soft type bread that I associate with this holiday. White as white can be, light, fluffy, a little yeasty.

Thanks

I suggest making your own Brown-N-Serve rolls. Use your favorite yeast roll recipe. Follow directions for rising, resting, shaping and rising again. Bake at 275 for about 15 to 20 minutes. Do not let them brown, but they should be fully "cooked". Cool completely and freeze. To serve, pop them into a 400 degree until golden brown and delicious.

For instance:

BROWN 'N SERVE ROLLS

1 pkg. yeast
3/4 c. warm water
3/4 c. warm milk, scalded then cooled
1/4 c. sugar
1/4 c. shortening
4 1/2 c. flour
2 1/4 tsp. salt

Dissolve yeast in warm water. Stir in milk, sugar, salt, shortening and half the flour. Stir in remaining flour. Turn on lightly floured board and knead until smooth and elastic. Place in greased bowl; cover; let rise in warm place until double.

Punch down; turn onto lightly floured board and form into 24 rolls and place in greased pans. Cover and let rise until double.

Bake at 275 degrees for 20 to 30 minutes. Remove from pans and allow to cool. Wrap in plastic wrap or foil. Store in refrigerator or freezer. When ready to serve, brown at 400 degrees for 7 to 10 minutes. (Thaw frozen rolls to room temperature first.)
