Dry Aged Beef?

I'm starting to plan for my Christmas party, and was thinking about doing Prime Rib (7 meat eaters in attendance). I wanted to give good dry aged beef a try, but I don't know if any local butchers do it.

Anyone have any suggestions? I don't want to dry age it myself, as I don't really have a good place to do it (and I don't want to risk it with a large, expensive cut of meat).

I would give Jimmy at Butcher's Best in Prospect a call. He has done many special orders for us and a number of our friends. 365-4650.

Not really local, but Whole Foods does it. I had never cooked it myself and the guy working gave me a NY Strip for free so I could try it.

I love butcher's best... I probably should have called them before I asked, but my laptop was closer than their fridge magnet :-)
