Can I Freeze Ganache?

by Ann K » Thu Oct 01, 2009 4:49 pm

How about lemon curd?

I need to start making treats for a cocktail party next month.

Found this recipe http://www.foodandwine.com/recipes/milk ... tzel-crust in Food and Wine, and I'm hoping to make mini-tarts in a mini-muffin pan.

Should I freeze the shells and ganache separately?

No no no do not freeze ganache! Well at least not chocolate ganache. Chocolate is very temperature sensitive and extreme cold changes the taste and texture.
