Citrus Atlantic Cod at Ditto's

i used to serve at ditto's and i would eat the citrus cod usually about four nights a week. it's one of my all-time favorite foods. i want to try and recreate the dish at home and the only problem i am running into is making the sauce. dominic once told me the ingredients but i don't remember them exactly. i think he said butter, oj and maybe red wine vinegar. i'm sure it must have some other ingredients as well. does anyone have any theories as to how i can make this sauce at home?

that does sound close annemarie. except i know he said some kind of vinegar. red wine vinegar or white wine vinegar or something like that. i bet i could just add some to that recipe and come pretty darn close. or at least have a yummy new fish recipe.

also...i don't have much experience cooking fish at home. so therefore, i haven't bought fish either. where could i go close to home (i live near the zoo) to buy some good fresh cod? does kroger have this sort of thing? i have heard it's better to buy fish that has not been frozen because freezing can ruin it's texture. is this true?

Not close to the zoo, but you can order online or by phone. Stans Fish Sandwich .. Lexington Rd .. St Matthews. This week they have fresh cod (described as scrod) for 12.95/lb this week. You must order by Thursday for Friday pickup. stansfish.com Click on "this weeks specials". They are very good about giving you instructions on how to prepare.

Very few places bring in fresh cod. Virtually every place besides Stans except for some high end restaurants serve frozen cod. It is flash frozen at sea. It does not impact the texture very much, unlike if you bring some home and freeze yourself.

I doubt if Krogers sells fresh cod. It may be unfrozen but it has been. From grocery stores it is best to buy still frozen fish unless you are planning to use all of it that day.

I agree with everything Steve said about supermarket cod and their fish in general, it's all been frozen. But it is possible to get fresh fish in this town on a daily basis. Highland Fish Market in Middletown at 12121 Shelbyville Rd has fresh cod daily, no need to preorder. They do tend to run out of fish towards the end of the day so go early or call them at 254-3474 to have them hold some back for you. Disclaimer: Yes I used to work there.

Are you sure the scrod is "fresh cod"? Scrod can be a number of fish.

I am not real sure of much of anything. However, a call to Leila at Stan's should answer the question. Her knowledge of fish and her integrity are above reproach.

I meant to mention Highland Fish in my original post. It is even farther from you in Middleton. They have excellent products that I have purchased and a large selection, both fresh and frozen, available daily. They are probably the best place for seafood products since Stan's closed the retail operation.

The sauce you described sounds like a Buerre Blanc Sauce. You'll find lots of versions if you google it. Here's one....

hey everyone, thanks for all of the input. i think the suggestion about the buerre blanc sounds right on point, leann. the citrus sauce at ditto's is very tangy and flavorful but also quite velvety/silky. i'll bet it is, in fact, a buerre blanc and it's all that butter giving it the texture it has and of course, the citrus giving it the tang. now that i know where to pick up the cod, my next day off, i'll give this a try and post on how it turns out. thanks everybody!
