i have some nice boneless pork chops that i want to make tonight. I have been looking at some recipes that use crackers as a breading. i had never heard of this before. Most call for saltines, i saw a couple that used Ritz crackers.

The recipe calls for dredging the chops in finely crushed crackers, then in an egg mixture, then in the crackers again. Some of them add a bit of flour to the crackers. And the egg mixture is heavily seasoned.

Has anyone done this before..... would like to try it, but i just dont want really horrible soggy yucky pork chops...

I haven't done or had this, but here's my 0.02.

The crackers > egg > crackers sounds a bit much to me.

I would think a light dredging in flour, then eggs, then crackers would work better. I think I would also season the flour and/or crackers, but not the eggs. Salt in the raw eggs could do weird things like pull water out and mess up the emulsion reached by beating.

thanks for the advice Brad... i dont usually season the egg mixture. It did sound different to me. I am going to go with your flour-egg-cracker idea.

Hopefully they turn out nice. If not the greens and mashed potatoes i made came out GREAT!

I do pork cutlets -they have been run through the tenderizer-with seasoned flour, egg, crackers (saltine) and they are great!!

i was in a pinch one day and had no breadcrumbs on hand. i coated our porkchops with crushed potato chips. they were so delicioius and the crust was very crunchy. i just peppered the pork chops, gave them a very light coating of flour, then the egg, and then the chips. i didn't add any salt because the chips already have so much. i've also used crushed corn flakes and that turned out pretty tasty. my favorite porkchop coating though, is panko.
