I need a rockin' good (canned) salsa recipe

The chilies are coming...the chilies are coming...and boy do I need a good canned salsa recipe.

Unfortunately since the blight got my 'maters I'm going to have to use either canned diced or store bought fresh tomatoes but I've got chilies end of things covered...Jalapenos, Scotch Bonnet, Red Savina and yes, I've even got some Bhut Jolokia's (which I am as frightened as a little school girl to try). I've got Chilies in the garden I can't even pronounce the name of (must be French).

I haven't had a chance to can salsa in a few years and unfortunately lost all my recipes in a divorce about 6 or 7 years ago (along with a house, a couple of cars and a few other sundry items...but hey, I'm not bitter). Evil women aside, can anyone help me out ? I'd like to be able to can a dozen or so quarts and don't mind experimenting with different recipes.

Thank you Annemarie, I appreciate the link. Actually I'm hoping that someone will be kind enough to share one of their 100 y.o. family recipes....Then again they didn't have canned tomatoes back then did they :)

I missed something...Who took a salsa recipe ?

BTW, the recipe that Annemarie linked looks pretty good. Might have to doctor it up with a bit more heat however.

Yeah, she took your salsa recipe? Dude why not head over to one the area farmers markets for some real tomatoes as opposed to the canned units. Ill set you up with some red ones.
The tall one wants white toast, dry, with nothin' on it.
And the short one wants four whole fried chickens, and a Coke.

Heya Steve,

I've been making salsa for years. I prefer the fresh as opposed to canned because I do not like the color and taste that the peppers get after they have been processed. That said I can fresh tomatoes from my garden and process the peppers by running them in the food processor with a little lime and freezing them in ice cube trays then once frozen I put the cubes in plastic storage bags. Hope that helps.

Oh freaking DUH !!!!...I was thinking...well never mind I guess wasn't thinking. :? Man, I have GOT to do something about this "shorttimers" I seem to be having. It's GOTTA be something from the 70's causing it. Next thing you know I'm going to be waking up each and every morning with a whole new set of friends :roll:

Hell yeah, she got my salsa recipe along with a bunch of other less important things like a house, a 401K, a couple of cars, etc. It was the recipes and a couple of guitars that really pi**** me off though. Ya'll tell me THAT ain't cold hearted.

Dude, I thought all the 'maters got the blight. You mean there really IS some nice fresh ones still around ? I am all over that news. Thanks.

Yeah man, I manged to pull out some from my patch. At the Phoenix Hill market yesterday there were six vendors all with tomatoes. Head over to the St Matts market this Sat and score some.
The blight is hitting alot of folks pretty hard, but of these guys that grow for market sales put out more than just one planting, and are getting fruit off their later plantings.
The tall one wants white toast, dry, with nothin' on it.
And the short one wants four whole fried chickens, and a Coke.

Actually I've got to run up to northern Ohio this afternoon and pick up my daughter and then turn around and bring her baaaack to KY for a visit. Hell, I thought once they hit their mid-20's ya got 'em off yer payroll. Guess not. Thanks again for the heads up, I'll hit one of the markets this weekend.

Seen any good heirlooms? I'm dying to have some yummy sliced tomatoes with sea salt and pepper that actually taste like tomatoes, not mealy, grocery store mush. I wish I could grow tomatoes. I can keep pretty much everything else alive, but have had awful luck with 'maters.

If you can make out to the St Matts market on Sat morning,look for my Anne she will have heirlooms. Otherwise try to come out to the Sergios offline this Friday and Ill set you up with some.

Man, I'm sure the hubby would love to go to the offline at Sergios, but we're going to a concert that night. I'll see if I can drag him to the Farmer's market...I'm in severe need of veggies that taste like...something.

Creation Gardens has heirlooms.

I'm flipping through a "Sunset Magazine Annual Recipe Collection - 1990" I picked it up at a yardsale about 15 years ago. Lots of Southwest/Western recipes. Here's an interesting one.....

SCORCHED CORN & CHILI SALSA
--------------------------------------
2 medium-size ears corn
1 small ripe tomato, stemmed, cored, seeded, and finely diced
1 medium-size fresh Anaheim (California) chili, stemmed, seeded, and finely diced
2 cloves garlic, minced
2 tablespoons lime juice
1 tablespoon ground New Mexican or California chilis
Salt

Remove & discard husks and silks from corn.
Place the corn on a grill 4-6 inches above a solid bed of hot coals.
Grill until lightly browned on all sides, turning as needed.
Remove corn from grill and cut kernels off cob.

In a bowl, mix corn kernels, tomato, diced chili, garlic, lime juice, ground chili, and salt to taste.
Serve or cover and chill up to 1 day. Makes 2 cups.
