my leftover french fry epiphany

the other day my bf brought wendy's home for me after work. i wasn't feeling well so i stuck it in the fridge for later. the next day i pulled the fries out of the bag and was going to just throw them out when a little lightbulb came on in my head. here's what happened:

i dumped the fries onto a cutting board and diced them up into small pieces. i heated my iron skillet over medium high-ish heat and poured in some bacon fat (i keep it in a coffee mug on a shelf over my stove). when the pan was hot, in went the fries, along with some cubed ham. meanwhile, i began scrambling a couple eggs in another skillet. i pan-fried those little fry nuggets until they were as crispy as i wanted them and then, when the eggs were almost done, i dumped the whole mess of ham and potatoes in with the eggs (and some salt and pepper of course) and mixed it all in. i threw in some shredded cheddar and jack cheese and let that melt. MMM...i scooped it all out of the pan and into a bowl and for good measure, spooned a little salsa over the top before devouring it without even offering BF a bite! GARGGGG, so good :)

oooh, another light bulb just now...next time i'm going to make a burrito out of this. :twisted:
