Pudding cakes at Kroger.....

I don't know if anyone has had the pudding cakes at Kroger before, if you have that is what I would like to replicate. I am NOT a baker, so I do not know if the recipes that I should be looking for are pudding cakes or pound cakes. All i know is they are the nice, big, moist cakes that are baked in a ring mold. My children LOVE them, but at 6.99 a cake, I know it is definitely cheaper to make at home.

Any suggestions anyone?.......

"Ring mold" sounds like bundt cake to me. That's my favorite cake pan by far, anyway - the hole in the middle means you can get it done evenly without over-cooking the exterior. Is it a cake made with pudding, or is it filled with pudding?

They're about the density of a pound cake, and they have this lovely glaze over the top. If anyone can figure the recipe out, I'd love to have it, as well!

It is not filled with pudding, I would think that the name means it is made with pudding. As Michelle said, they are super moist and rich. Sometimes a bit too crumbly, only sometimes, but they are just really good cakes.

Funny thing, I have soooo many ring mold cake pans, (I buy kitchen crap like crazy on sale, yard sales, just because I love to cook); but I have NEVER used one. In a way I am intimidated by the ring shape because I am not familiar with the cooking method, I would think it would take longer than a traditional 9x13 because all the batter is not laying out flat.

Generally speaking "pudding cake" starts as a cake mix to which you add dry pudding mix and a combination of eggs, milk, oil. If you can get a copy of the Cake Mix Doctor (book) it's full of such recipes. Since I only bake from scratch, I can't offer any real recipe. If you do an online search for "doctored cake recipes" you should get a lot of hits.

I bought a couple slices two nights ago for a quick dessert with fresh fruit. The cake reminded me of my mom's sour cream bundt cake- I'm sure it's the same idea. Mom was a terrible cook, bless her heart, but she could make a nice bundt cake.

I was thinking the same thing. Our fave chocolate cake out of the Cake Mix Doctor is the "Darn Good Chocolate Cake." She has tips on using different size pans, too.
