Ice cream

Heya Folks,

It's time for me to break out the ice cream maker I bought last fall on a whim after seeing it posted on Craigslist. Sadly...it did not include the manual. It's a Cuisinart. I muddled thru a peach ice cream recipe and it turned out pretty good. Just wondering if anyone had any ideas.

There is a very interesting article in the June/July issue of Fine Cooking on ice cream making, part of their "cooking without recipes" series. It has a basic custard master recipe, a lot of suggestions to infuse the ice cream custard and another list of suggestions of ingredients to add and mix in, and finally 2 pages of their creations - 18 different flavors, from double vanilla bourbon to strawberry basil. A very nice primer for me as I'm fairly new to ice cream making. I highly recommend the article and I love the magazine. I'm going to attempt the hazelnut chocolate chunk this afternoon.

Sarita,

I do a lot with Sorbets and gelato, rather than true ice creams to get that true fruit flavor (and save fat). This one was very, very good last month with supermarket strawberries- it'd be outstanding with strawberries from the farmer's market/u-pick.

Fresh Strawberry Gelato
Bon Appétit | May 2009

La Divina Gelateria in New Orleans

yield: Makes about 4 cups

This recipe comes from Katrina and Carmelo Turillo, owners of La Divina Gelateria in New Orleans.

Ingredients:
3/4 cup sugar (preferably organic)
1 tablespoon cornstarch
1 cup whole milk
3/4 cup heavy whipping cream
2 1/4 cups sliced hulled strawberries
2 tablespoons pomegranate juice

PreparationStir sugar and cornstarch in heavy medium saucepan. Whisk in milk and cream. Whisk over medium heat until gelato base thickens and begins to bubble, about 5 minutes. Pour into bowl. Cool over ice, stirring occasionally.

Puree strawberries in processor. Strain into gelato base. Mix in pomegranate juice. Chill 3 hours. Process in ice cream maker according to manufacturer’s instructions. Transfer to container. Cover; freeze until firm, at least 3 hours and up to 2 days.

Corbett's makes on occasion a tasty Earl Grey ice cream and a decadent Woodford Reserve Chocolate. We had bacon ice cream while traveling this past winter.

Wow! Thanks ya'll for your good ideas. Does anyone know what the shelf life is on home made ice cream and tips to extend it's life in the freezer with out changing the consistency?

Tell me how your Cuisinart Ice Cream maker works out...We just bought one (with an extra bowl) brand new in the box at a yard sale last weekend for $5.00(What a Steal!)

As far as shelf life goes, I don't really know because whenever my wife makes ice cream, it doesn't hang around too long.
We do have an airtight container she bought just for ice cream that will help keep other odors(like onions or garlic) from permeating your creations.
She bought it after one time I made some garlic laden pasta dish and we put the left overs in the fridge. She had just wrapped the mixing bowl of the old ice cream maker in plastic wrap not very tight and the next day the ice cream tasted like garlic. Blech....

my experience has been no loss of texture for about 3 days. I usually put a sheet of plastic wrap directly on the mix in a click clak keeper and that mitigates freezer odors as keeping it tasty. Of course it never lasted more than 72 hours with my son in the house so your results may vary. The Fine Cooking article is a pretty good starting point.

That's funny Dan. I'm a real stickler for keeping my freezer fresh due to me liking my ice cubes tasting like ice. I like those Arm and Hammer fridge and freezer boxes and buy them by the case. I put some plastic wrap on top of 1/2 plastic container pints filled with peach ice cream but I have not tried it yet to see if it kept. If it does I have very big plans.
