Kale

I made something right! I'm so excited. Unlike most of the other folks that post in these forums I have no culinary skill what so ever, so when I made something new this weekend and it was edible and no one died from eating it, I was thrilled. And it was so easy.
I sautéed some thinly sliced onions and fresh garlic in some olive oil (OK, I did add a teaspoon or so of bacon grease) and added a bunch of washed and coarsely chopped kale, salt, and pepper . Cooked it all down. It was heaven. And at a buck a bunch, pretty cheap too.

Congratulations Carla,
Kale is a green that is rarely grown in the Carolinas. Collards and Turnip greens are the greens most people down there eat. I'm not sure why Kale hasn't caught on there. I really like it a lot. To me it's a mild green and not as stringy and woody as collards can be. Maybe the reason you don't see much of it in the deep south is because of the climate. I don't know much about how the plant does in the sandy soil or if it will tolerate the heat down there. That could be why you don't see it growing in the gardens down there. I'm glad there is plenty up here.
Did you cook corn bread too?

Yes I did cook some corn bread but I usually just use some Weisenberger corn bread mix. I love that stuff and it's real easy. My father -in-law used to make the best cornbread ever and the Weisenberger mix is the closest to his I've been able to find. (It has a hint of soda in it.)

My second favorite cornbread offering are YOUR hushpuppies. Jeez those are good. I could eat a basketful of those little guys! (Oh wait, I DID! :wink: )
