Here's an article I wrote about a fairly basic but tasty version, Becky:

And here's an article I wrote featuring a somewhat similar vegetarian version. No tofu or soy protein or anything, just made with eggplant and hearty veggies instead of meat:

In addition to the standard meat/cheese layers we like to add in(on occasion) a layer of mushrooms(sometimes you can find portabello caps that fit perfect),a layer of roasted peppers,a layer of caramelized onions,or in season large slices of good garden tomatoes. I also like to mix in some spinach and red pepper flake with the ricotta cheese as well.
The tall one wants white toast, dry, with nothin' on it.
And the short one wants four whole fried chickens, and a Coke.

Lasagne is one of those things I like to make when I don't know what the people I'm feeding will like. Almost everyone likes lasagne.

I don't eat meat so it requires a little creativity to work some protein into the dish. I like those fake "ground beef" crumbles but not for this application. I've had good luck with Nutrela soy protein chunks- sounds gross, I know, and it's more of a Tuesday night dinner/Wednesday lunch than a fine Saturday dinner but they are very dry so they soak up a lot of the excess moisture that vegetable heavy lasagne sometimes is plagued with. I bought mine at Patel Bros grocery on Hurstbourne (same center as Shalimar and Liquor Barn).

It's funny....I've made lots of lasagne over the years, but I highly doubt that I've ever made it the same way twice!

I sometimes make a "Greek" version with lamb, spinach, feta, etc. . . I think I typically use crushed tomatoes instead of marinara.

We made Robin's Veggie Lasagna last night and it was great. There was a large quantity so we got leftovers for tonight. I will say that with a healthy dose of fennel seed you sort of fooled yourself into thinking there was sausage in the dish. Thanks Robin for a great recipe that we will use again.
