Not an "expert" as many here are, but my favorite cheesecake recipe was from Cook's Magazine, and had no crust & was made in springform pan (wrapped with foil & cooked in water bath).

Unfortunately, lost recipe due to hard drive crash, so if anyone has it??????

Hey, annemarie (and everyone) - not to be a pedant, because I'm sure you'd want to know: it's a "springfoRm" pan, rather than a springfoAm pan. It springs open when you unlock the latch, you see.

And don't be afraid of the waterbath - it makes for a creamier texture. Just make sure your foil is wide enough and wrap it really, really tight. :)

No lashes, annemarie. You might find this funny. You and I have never met, and I have literally no idea what your ethnic heritage may be, but when I read your posts you have always had an Italian accent in my HEAD. Not sure what's going on there, since that doesn't happen to me with anyone else (although when I read other people's posts that I've never met they do have an assigned voice - just nobody else with an accent). I have no idea where this came from but I find it an interesting coincidence that your mom's (probably not even Italian?) first language was not English. I'm sure you speak perfect, unaccented English, but for some reason I cling to this little delusion.

I know several people that met you at Gayle's party for Phil and Donna, and I considered asking them if you had an accent, but I decided to just let it ride until I meet you myself.

I hope you're not offended! Hopefully you find it funny like me.

Now I'll sit back and wait for the comments about the voices in my head. Gimme your best shots, people.
