Need to buy meat to prepare brisket

We need to cook a brisket for a traditional holiday meal. Where would be the place to buy the best meat available? Brisket begins with the meat, and if the meat isn't great, the brisket will not be good. I need suggestions as ethnic brisket (sounds like a tribe in northern China) might be hard to find in Louisville.

Kingsley has Kosher Brisket (Taylorsville road near Bowman Airfield)

Phil,
While you are at Kingsley's, pick up one of their marinated tri-tips for your next ad-hoc grilling session . . . one of those and some of their pre-made twice baked potatoes are perfect for time constrained afternoons when there is not time for prep-work. It freezes incredibly well, too.
Also, their bone-in, Amish raised chicken is some of the best chicken you will ever buy. Buy the breast with the skin on, lightly coat with olive oil, and salt and pepper and bake at 350 for one hour. Turns out great every time.

Thanks everyone. I will certainly give them a call and order our brisket. I'll let you know how we prepare it. However, I do know that it has to cook for hours!

You can sear the brisket in the oven at (pre-heated) 500 then......
Low and slow! put your meat, and all your stuff on top, i.e. liquids, onions, sauces, little liquid smoke
in a roasting pan, cover. put in ( turn down tepmp) oven at 250 the night before you need it, and let it cook until morning..... you will have a perfect brisket with "gravy" .

That's what you call " ah, I can do that in my sleep" !

I'll be cooking mine with medjool dates, shallots, red wine and new potatoes. It comes out with a sweet and sour sauce. Damn, I've just written myself into one heck of an appetite.
