Have a great Pad Thai recipe?

Hello all-

After trying all of the Thai restaurants in the Louisville area (I think Mai Thai's is the best), I became determined to cook my own Pad Thai. I've tried most of the bottled sauces, and even attempted a few times to make my own with tamarind paste, fish sauce, and palm sugar.

For some reason, I can never get it to turn out the same! Either the noodle texture is off, or the flavor, or both! I finally got to the homecooked Pad Thai mountaintop once, but haven't been able to replicate the flavor.

Anyone have a recipe for Pad Thai that they've tried and liked? Thanks for sharing!

I'm sure with foodies this is a no no but I use Simply Thai pad thai as a base and doctor it up.
My favorite is to add carrots, broccoli, green onions, a little very very teriyaki, peanut butter and that hot thai sauce.
And...to my shame a shredded rotisserie chicken.
I top it off with lime juice and chopped cilantro.

I thought there would be more responses to this, I'm surprised.
I'm not a big fan of Pad Thai myself but I remember watching Alton Brown make it last year, I think, and thinking to myself that if I ever made it his is the one I would make. As I recall it would entail a trip to an Asian market. Good luck.

I've tried to make it, but it never comes out right. Noodles are either too chewy or too mushy, and I can never get the sauce to taste right, either.

If you let the noodles cook al dente and then put them in a strainer and run cold water over them it should set them up nicely. Then add them back to the pan to mix in with the sauce and stuff you add to mix and warm them up before serving.
