My wife's favorite dish is the Vodka Chicken at Pesto's in Valparaiso, IN. It is pan fried boneless chicken breast on top of Angel hair pasta topped with what they call a Vodka Cream Sauce. The sauce is white and not as thick as Alfredo, but still sticks nicely to the chicken and the pasta.
I can normally come up with reasonable recreations of dishes we like, but this sauce has been a thorn in my side for a couple of years. Every time we go to Chicago, we make the detour to Valpo to eat this dish.
Does anyone have any ideas/recipes for a vodka cream sauce that does not include tomato?
