Are you looking for anything specific? The http://www.epicurious.comsite has a number of highly rated recipes listed, and while I haven't tried any of them, I've had huge successs with their 3.5 - 4 fork rated recipes. Just go to the site and search on "rabbit".

Braise the legs in Burgundy, veal stock, mir poix and a cheesecloth satchel of herbs and aromatics. Depending upon the age of the animal, generally about an hour to an hour-half.

Take some of the braising liquid, strain it and then reduce in a saucepan. Be sure to check the reduction fairly often, as it can get too reduced and turn into a mess. Ladle some of the sauce over the legs and keep some to the side in a gravy boat.

For the tenderloin, bread in buttermilk and panko bread crumbs. Pan Fry 3 - 4 minutes on each side or until m+. Salt and pepper after removing from oil. Once plated, zest some fresh lemon zest over it.

I like to serve them on separate plates, family style. I hate it when sauces take the crunch out of fried items. :wink:

hey fred, you let me know when you want rabbit and i will take the time to cook rabbit 5 ways, grilled rack, braised leg, rillette, sausage and seared stuffed saddle. i dont get on here much so call me at corbetts 327.5058 after march 15, im off to get married

Clem's Seafood in Buckner will sell them to you by the case. I bought a case this fall and tried them.

They where/are quite good but, they're imported from China. :shock: I'm suspicious, very suspicious. The rabbit Kroger stocks are a US product.
