sapporo/osaka salad dressing

by Luca B » Mon Feb 16, 2009 9:50 am

I love the salad dressing they serve at these places (most sushi places have similar dressings). I have been looking for a recipe and found something sort of like it but not quite it. I would love for someone to share it if they have it.
Thanks

Luca, I've made the following recipe and it comes pretty close. Better after it has set at least 24 hours in refrigerator.

Japanese-style dressing

INGREDIENTS
1/2 cup minced onion
1/2 cup peanut oil
1/3 cup rice wine vinegar
2 tablespoons water
2 tablespoons minced fresh ginger root
2 tablespoons minced celery
2 tablespoons ketchup
4 teaspoons soy sauce
2 teaspoons white sugar
2 teaspoons lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon ground black pepper

DIRECTIONS
In a blender, combine the minced onion, peanut oil, rice vinegar, water, ginger, celery, ketchup, soy sauce, sugar, lemon juice, garlic, salt and pepper . Blend on high speed for about 30 seconds or until all of the ingredients are well-pureed.

I don't have a recipe, but I've come pretty close by making a vinaigrette in standard acid-oil proportions, with rice wine vinegar and orange juice as the acid, peanut oil and a dash of sesame oil as the oil, then very finely grate fresh ginger root or press it through a garlic press into the vinaigrette until it tastes right. A little salt, chilled iceberg lettuce, and I've come reasonably close to the Sapporo/Osaka/Benihana/etc. dressing, in my opinion.

Thanks for the replies.. I will give them a try. Ketchup sounds interesting.
The recipe I have is similar but you also put chunks of carrots and about a 1 inch piece of ginger in it and blend/puree it. The texture is right on but the color isn't quite right.

You could always take the lazy way. I know Sapporo will sell the dressing outright. I, too, love their dressing, but I'm way too lazy to go to the trouble.
