Actually, we do knife sharpening all the time. I just have a Saturday ever month that I will sharpen 2 for free. The cost is $3.50 for over 6" and $2.50 for under. It usually only takes about a day.

Is it okay to wash 'good' knives in the dish washer or should they be washed by hand?

You should always wash your knives by hand. The detergents are too harsh and will pit anything good and cause rusting. They also will scratch the protective coating off your racks and cause more rusting. Try to stay away from citric scents. The acid is harsh on your utensils, flatware and cookware.

Hi Luca. I took a knife skills class at Susan's place last year and it was great fun as well as an educational experience. I'll just cite the instructor here as to what he said about washing knifes. It's an excerpt from a review I wrote on the class. If you'd care to read my whole review, just PM me. The class is quite worthwhile.

"The last part of the class was about how to clean and take care of the knives. Suffice it to say that if you possess a quality set of cutlery, never let it come anywhere near your dishwasher. Clark even said it's verboten in Germany to put knives in one."
