Tapioca Maltodextrin?

Does anyone know if this is available locally? If so, where? I know of some online resources but, due to my impatience, would love to find some to use this weekend. Any leads are appreciated.

If it is still there it would be next to Ben Franklin crafts.... I thought I saw something at Patel brothers (Indian Market) the other day.
They are located next to Shalimar Indian restaurant in the shopping center on Hurtsbourne Lane. You might want to call them.

Thanks for the suggestions. I struck out everywhere suggested but still need to check that Indian Market. I did find a package of maltodextrin in the homebrewing section of Liquor Barn. I'm fairly certain it is not derived from tapioca but rather wheat, rice, or corn. I'm going to give it a shot and see how it works out.

No offense to anyone, but i don't think you guys are suggesting what he's looking for.
No place in town is likely to have it.
I can almost guarantee anything you found locally is not what you're looking for.



Presumably you're poking through the Alinea cookbook (or some other resource) that has recipes for making fats into powders?

FYI:
Look for "Tapioca Maltodextrin" literally word for word. The trade name for it is N-Zorbit.

Products labeled as "Maltodextrin", "Corn Maltodextrin" "Tapioca Starch", or "Tapioca Flour" will not work.
They'll just give you a big soupy mess.

Another word of caution, when using liquid products... stick to saturated fats.


http://www.le-sanctuaire.com has the best prices for pretty much all industrial products (retail at least),

Another word of note, a one pound bag of the stuff is literally as big as a pillow.
It's not dense at all and is largely why it serves as an excellent medium for flavor.

Thanks for the insight Ethan. I'm glad I didn't get around to using the stuff I found. And yes, you guessed correctly, it's the Alinea cookbook. The salt caramel recipe seemed fairly manageable and I thought it might be fun to serve some friends. I had a chance to do the tour there a couple of weeks ago and loved how that dish worked. The night overall was really amazing - the dishes were all working on so many different levels it was almost too much to take in.

Online ordering it is. Oh, and thanks for the link. Way cheaper than willpowder.

Willpowder is probably the most expensive source out there.
I'm a big fan of Will Goldfarb's work, and his business venture through Willpowder...
but damn.
Some things you can get a double or more in quantity at the same price through Le Sanctuaire than you'd pay through Willpowder


Did you by any chance pre-order the book and/or have you been poking around the Mosaic?
There is a wealth of knowledge available on there.
I ask, because i know there was a thread with questions regarding the salted caramel recipe on there, and might be worth looking into.
Hopefully when the Post Modern Pantry goes live, the prices will be competitive.

I got the book for Christmas and registered for the Mosaic but haven't had much time to poke around. I'll check it out to see if I can garner any insights.
