If we were talking spices, I'd probably go with cumin and cardamom.

All these in savory or sweet applications.

If we were talking spices, as much as I love your choices, mine would be sumac.

Very nice choice Doogy.

Not too many people are familiar with sumac. That is, other than the poisonous type.

I put vegetables in your desserts, white chocolate with your fish and other nonsense stuff that you think shouldn't make sense, but coax the nonsense into something that makes complete sense in your mouth. Just open your mind, mouth and eat.

Ethan,

What is Saffron considered? A spice ? What defines the difference between an herb & a spice?

Thanks,
Deb

In culinary school, we learned that :

An herb is "any of a large group of aromatic plants whose leaves, stems or flowers are used as a flavoring; used either dried or fresh"

and

A spice is "any of a large group of aromatic plants whose bark, roots, seeds, buds or berries are used as a flavoring; usually used in dried form, either whole or ground"

Marsha,

Thus Saffron is an herb, not a spice, since it is the stamens from the crocus flower. Right?

Thanks,
Deb

I first learned of this spice at Saffron's. From there I started seeing it show up at places like the original Shiraz at the Cottages of Brownsboro. At that time in my life, I bought some (actually a lot). It's now surpassed cumin as my fave spice. And trust me, I have many, many spices I love and cannot do without.
