Recipe: Peach & Tomato Gazpacho

I know it sounds odd, but this soup is incredible made with heirloom red & yellow tomatoes and in-season peaches (it's also a great use for "too ripe" peaches) . My version is adapted from Gourmet Magazine- Sept. 2005:

Serves 3

1 1/2 lb tomatoes, chopped (4 cups)- I prefer a mix of red and yellow, for flavor and color
1 lb chilled peaches, pitted and chopped (2 cups)
1/4 cup crushed ice
2 tablespoons chopped shallot (1 medium)
2 tablespoons olive oil
1 1/2 tablespoons white-wine vinegar (divided)
½ T raspberry vinegar (optional) or additional 1/2 T white wine vinegar
1 tablespoon chopped fresh tarragon
1 teaspoon salt
1/2 teaspoon black pepper
1/4 to 1/2 cup water

Preparation:
Purée two thirds of tomatoes and half of peaches with ice, shallot, 1 tablespoon oil, 1 tablespoon white-wine vinegar, ½ T raspberry vinegar (or sub more white-wine vinegar), 2 teaspoons tarragon, 3/4 teaspoon salt, and 1/4 teaspoon pepper in a food processor or blender until very smooth, about 1 minute. Add water if desired to desired consistency.

Small chop the remaining tomatoes and peaches and toss with remaining tablespoon oil, remaining 1/2 tablespoon vinegar, remaining teaspoon tarragon, and remaining 1/4 teaspoon each of salt and pepper in a bowl. Serve soup in bowls topped with tomato peach salsa.

Note: The use of ice and chilled peaches renders a gazpacho that can be served immediately without additional chill time.

Deb, after I told you that Mary would never go for a savory dish with fruit in it, I described this to her last night, and she said "Go for it!"

We can supply the heirlooms from our garden. Ditto the tarragon. Now all I need to do is find the best, juiciest, localest peaches still available, and we're there. This recipe looks great!

Paul's in St. Matthews has really good peaches right now, Robin - I just made peach/ginger sorbet from some this morning.

I go to Paul's every Sunday for 7 peaches. They are a daily addiction.

That's one of our regular sources, Marcia (and Heather)! Thanks!

However, I have to say that we've had even better peaches from the Beargrass Farmers Market - particularly a farmer from Larue County who was there the week before last. Accordingly, I was kind of thinking about waiting until Saturday, although we'll likely hit Paul's for a load before then. :)

FYI: The original recipe called for the soup part to be run thru a sieve before serving (and then adding the salsa). Personally, I like the texture of the soup without doing it - and it saves a significant amount of time.

For those of you who try it, let me know what you think- I'm making another batch with garden tomatoes and peaches from my CSA basket this weekend...

That's a yummy take on Gazpacho you have there. I did run mine through a sieve though. My wife liked it, couldn't get my daughter to try it though.

We got some to die for peaches from the farmer's market over the weekend. We purchased them from the gentleman in Foghorn Leghorn overalls and the cowboy hat. I'll be very sad when they're gone. Nice to know Paul's has good ones in a pinch.

Just made this yesterday and it was so good! I didn't have any fresh tarragon, had to use dried, that's the only thing that would have heightened my enjoyment of it. I added a bit of chopped red bell pepper for color in the salsa.

I didn't have any raspberry vinegar so I sub'd tarragon vinegar along with the fresh tarragon.

Okay, I'm shamelessly bumping this recipe back up. I really think it's really wonderful with this season's fantantasic peaches and tomatoes. Making another batch this weekend :D .
