Poppy Seed Dressing

Does anyone have a quick, relatively light recipe for poppy seed dressing that they like to share? One that would compliment a romaine/spinach salad with fruit? I'd be grateful for suggestions!

Poppy Seed Dressing

1 cup granulated sugar
1 tsp. dry mustard
1/2 tsp. salt
1 1/2 tsp. paprika
1/2 cup apple cider vinegar
1 1/2 cups vegetable oil
1 tsp. grated onion
2 TBS. poppy seeds (may be omitted)

Mix sugar, mustard powder, salt, paprika and vinegar-slowly add the
vinegar beating with an electric mixer on low until the sugar dissolves (this may take about 5-10 minutes) add the grated onion and poppy seeds (if using).
Beat a couple more minutes. Serve over spinach/strawberry
salad. Store in refrigerator. I use my stand mixer and just let it mix slowly for a while.

If I was doing this I would heat the vinegar with the sugar to speed the dissolving
