After buying a good Japanese knife last year and discovering how a good knife can not just improve your culinary game but my enjoyment in cooking, I thought I'd go ahead a buy a couple more pieces. I needed a good paring knife and maybe a smaller serriated blade for tomatos. I found some Sabatiers on line, high carbon (good), decent price (OK) and since they were the Sabatier brand, an brand I've always associated with quality knives, I plunged. I should have done a bit more research. Check out this Wikipedia link (granted, it's Wikipedia and can be trusted only so far but it was my last resort after reading so much conflicting information found elsewhere....ie "WE make the only real Sabatier knives!" "No WE are the real makers of Sabatier knives!" and on and on...) This was a real education...
