Wild Boar?

I have a hankering to make the wild boar ragu we had in Tuscany- but no source for the wild boar shoulder. Any ideas??

Mattingly Foods of Louisville carries wild boar shoulder.
We sell by the each and they weigh about 4# or so.

That's great to know! My wild boar ragu was a hit; I'll definitely call on you the next time I need some.
I wasn't aware that Mattingly did retail/ special orders. Are their other specialty items we can get from you?

We carry several wild game and specialty species/products.
Our products are typically available in food service size cases, but we do split many of those cases.

I have been a long time reader of Hot Bytes, but have been hesitant to interact, because I am in the industry. But I did want to throw this out to you because we had just brought that boar shoulder in for one of our customers and had it available.

We can sell all of our items through our cash and carry area at the back of our warehouse at 2055 Nelson Miller Pkwy. It is typically best to pre-order something and have it keyed in before you arrive.
We aren't quite up to retail service snuff yet. Our warehouse office person actually handles the window. Heck our will call window was even on an episode of Damaris Phillips' Food Show Network Series.

We carry several different lines of beef, veal, lamb, Joyce Farms All Natural poultry, Berkshire Pork, Boubon Barrel, Henry Bain Sauce, Schreiber Spices/Bases.
We can cut steaks or chops for you in packs as small as 2ct. We place our fresh cut orders by noon the day before and it is ready by 800AM the next day.

We sell our products on line at ATHOMAS MEATS .com as well.

We have several personal chef types who buy from us.
