In the upper mid-west (the area which I associate with really -good- Bratwurst) many of the sausage makers include veal -and- a bit more seasoning in the blend...I miss that. Occasionally I'll find real "made in Wisconsin" style Brats at Costco and when I do I make sure to stock the freezer. Not sure what is up with these gross looking "white Brats you see sold in supermarkets around here.
