Whole Deli Ham

by Beth K. » Tue Dec 14, 2010 2:45 pm

After just purchasing a spiral sliced ham for Christmas Eve, we recieved a whole deli ham as a gift. It's huge - 10 pounds probably. I don't know if we can return the spiral ham, and thus we are suddenly blessed with an abundance of ham! A few questions - how long will it stay fresh in the refrigerator once we have opened it? Can we cut it into smaller portions and freeze them? If so, how long will they keep in the freezer?

I've never had good luck freezing ham no matter how well I wrap it before putting it in the freezer. It's always very sub par after thawing. Maybe consider offering your spare ham to a food bank?

I have found the best way to freeze ham is to use my vacumn sealer, in meal sized portions . We have had them in the freezer just over 6 months and have been happy with the taste. I usually use the frozen ham as fried ham slices, ground for salad, or cut up in a casserole.
