Just speculating here, you have a very moist ball of dough. The outside fries crunchy before the liquid in the interior turns to steam pretty much all at once. When it goes, it blows. :D Ravioli are two thin sheets of pasta with a solid interior, and it's more flat than spherical, so the steam-to-coating ratio is different. Or something like that.

I've had more than a few Escargot pop in my face because I forgot to pierce them with a toothpick before put them in the oven. Molten garlic butter and exploding slug parts can really harsh a buzz rather quickly. :P

Apparently Steve didn't know it either.

I applaud his stoneresque palate though. Some fried buffalo gnocci would be exactly what I would want at 3am instead of White Castle :lol:
