What gourmet street food would you be interested in?

Ok after much consideration we decided to scrap the gourmet burger idea. Buns simply take up too much space and I think we can come up with a better concept. We are toying with the idea of gourmet pork tacos and are doing some much needed research tonight. And by research I mean making a boatload of food and chowing down on it.

Tonight we are braising a pork shoulder with sofrito, I made fresh pico de gallo and my wife made a crispy pickled slaw. We are going to try a carnita recipe and a carne asada recipe that we found. To liven things up a bit I splurged on the good Manchego cheese to make it a bit more authentic. As authentic as mexican fusion can be anyway.

Compiled in this forum are foodies and industry professionals. Let me have it. Throw me some ideas that would interest you in a food truck. What type of gourmet street food would catch your attention enough to give it a shot? You all are my target market so your input is very important to me.

I would drive to get good Bahn Mi sandwiches, Korean "tacos", Hawaiian "shrimp truck"shrimp, great/innovating seafood (Louisville is missing), deep fried game birds (pheasant), anything done really great.

Just open already :D

Yeah I didnt want to copy Kogi or Nom Nom exactly but its so hard not to because their menus are so simplistic and so delicious looking.

Other things to consider....I love deep fried stuff and I have the big ole' gut to prove it. How about some
Empanadas with that tasty pork as a filling? You could also make some Mexican Tortas with that pork as well. Or how about making a nice Pork Chili Rojo? You could then make a Southwestern version of Poutine with the Chili & Queso Fundito over some Sweet Potato Fries. Also consider making several types of Picked Vegetables(Kim Chee, Cherry Tomatoes, Carrots, Radishes etc...)

YES!!! Empanadas for sure and we will need pickled daikon for the banh mi along with something else pickled. I am so stoked about all these ideas. Thanks

My wife wants to make cupcakes that look like hamburgers :wink:

I'd love to have some Belgian style frittes. They are either double fried or par boiled before frying. Served with a couple of dipping options including a spicy mayo.

We made these tonight. They were par cooked and sat to room temp and then fried again. Good ole Russets they were delicious.

Awesome! Now experiment with dipping sauces. You could go in a zillion different directions and they wouldn't take up much room. You should consider asking everyone on the forum to suggest sauce ideas........

My first vote is for Aoli (garlic mayo sauce)...or a spicy ketchup....or a riff on malt vinegar.

...But you could do something out of the box like....a "Frosty sauce" based on the popularity of dipping Wendy's fries into a Wendy's Frosty.

My wife lived in Germany for years and she said German Ketchup was delicious, we looked up the recipe and its just curry powder in ketchup. We put those chips on the menu and Ill definitely get some dipping sauce ideas.

We loved the idea of doing a bunch of diverse options but part of the appeal of street food in many places is that it IS so simple and not doctored. So along with some other ideas we decided to make sure we had some things on the menu that were very basic, simple and classically American street food staples. Fries, hot-dogs, grilled cheese with several cheese options. This would also throw some kid friendly options into the mix.

World Market on Shelbyville Road sells an imported Curry Ketchup - might be a good place to start for a taste test / reverse engineering project.

Next research will be Banh Mi sandwiches and braised pork belly sandwich. Been playing with Mantou and other Asian steamed buns for that one.
