Gourmet Burger Recipes

by Matt Davis » Mon Nov 22, 2010 6:17 pm

We heard Bobby Flay rave about a hamburger with a fried egg on top. During one of our, what we like to call, "research sessions" (which is a fancy way of saying we stuff ourselves with different burgers) we made a burger with an over easy/medium egg on top. How can something so obvious and so simple be so delicious? It was amazing.

We also made a Hot Brown Burger with a tomato slice, bacon and a mornay that we made. It was also extremely delicious.

Do you have any gourmet burger ideas?

I LOVE Chili Cheeseburgers. Maybe you could try making some Chili Verde to put on top with some Pepper Jack .
As much as I hate to admit it, because I don't like eating there, Red Robin has some pretty tasty burgers and they have some pretty good burger topping ideas. Perhaps you could improve on some of their ideas. It's not like they are proprietary :D

Yeah we had an idea of trying guacamole and some fried tortilla strips as kind of a southwestern type burger. We were already toying with the idea of having a homemade chili as a topper for hot dogs and sides, no reason we couldn't do a chili cheeseburger. But I am biased because I love messy food.

Slices of avocado, bacon herb sour cream, tomato and alfalfa sprouts. A now defunct place in Tn used to make those and the sour cream was what really did it...loved the little bit of zing! Not sure what kind they used, but it was really thick and had a very sharp flavor.

We tried avocado and a caramelized onion but the raw avocado was a bit much for us. Which was why we thought of taming it into a guacamole.

I LOVE the bacon herb sour cream idea, these days flavored mayos and sour creams are really diverse.

Down South they have a burger with melted pimento cheese on top, serve with sweet tea & life would be very good.

One of my favorites is carmelized onion and melted bleu cheese with a side (for dipping) of Henry Baine sauce...or whatever steak sauce you prefer. Nom. Nom. Nommm.

Darnit! Now I'm hungry again.

By the way, you might enjoy this article on the "smash burger" technique by The Paupered Chef.

Yeah thats the way my wife is convinced that we should go. Using a large scoop to get the portion and then smashing it on the griddle.

We are definitely going to offer vegetarian friendly meals. Right now we are leaning towards offering a vegetarian chili and a portabella burger. We talked about Boca brand burger but we might make a homemade veggie burger.

Still working on the diversity of a menu, I would definitely love to see some board favorite vegetarian burger ideas.

Check out BBC's and Meridian's offerings mentioned near the end of this recent review. I enjoy both of them considerably more than a soy-based commercial "protein burger."

I worked at Allo Speido before it went down and we used to have a grilled portabella with basil pesto coated white beans. Integrate some cheese and a bun and that could be a nice burger. Inspired by the old Allo and the louisville hot bytes forums.

Real Simple magazine's veggie burger recipe. Even my die-hard carnivore friends love it.

http://www.realsimple.com/food-recipes/browse-all-recipes/veggie-burgers-00000000014283/index.html

I have made it in its original form several times and loved it. Then, I replaced the couscous with red quinoa and it was even better.

How about a pizza burger ... chopped pepperoni and a little tomato paste and Italian seasonings in the burger, then topped with provolone, caramelized onions and mushrooms?

I have made them a few times and the pepperoni takes the ground beef to a new dimension when grilled.

take 2 whole heads of garlic and slice off the tops so the cloves are exposed. place them on a sheet of foil and drizzle with olive oil. wrap the foil around the garlic and bake at 350 for about an hour. remove from oven and allow to cool. open a can of chipotles in adobo. depending on how spicy you want your burgers, mince up two or more peppers. grab the heads of garlic (once cooled) and squeeze them. all the cloves will easily smoosh right out. mash this up and set aside a teaspoon or so. add the garlic and minced peppers to your ground meat along with a big pinch of salt. make your patties. while they grill, mix 1/2 cup or so hellman's mayo with the reserved roasted garlic and some of the adobo sauce from the can of peppers and serve this with your burgers. i like pepper jack cheese on these to add to the spiciness.
chi mangia bene, viva bene.

amen.
