I found a cheap 11x15 glass pan, so i practiced a cake in there. I used 11-12 cups of batter and it took forever to cook. I started it at 325 but after 30 minutes it still looked completely undone, not even starting to cook. I brought the temp up to 350 and still nothing........... after a total time of 45 minutes, out of sheer frustration i put foil on top of the cake. It was browning but still shook as if it was raw, very raw. Well, the foil helped, it finally began to smell like a cake was cooking. But it did take over an hour to cook.

When i cut it open it has an odd color, i am guessing because it was in that temp for so long. It kind of browned an inch into the cake. It tasted fine and was fully cooked. But of course this is not how i would normally want to make a cake. so i researched......

and read that you can use flower nails to help them cook. i also read about heating cores (you learn something new every day!) but, they sound too difficult to use, and from what i read most prefer the flower nails. Where can i find these, i tried the usual kroger and meijer, and i am REALLY trying to avoid looking at walmart.....

Make sure you grease and flour the nails just as you do the pan. Turn the nail upside down with the point sticking up BEFORE you pour any batter into the pan.
I don't like glass pans. They brown too much.
I bake at 350, and it usually takes around 50 minutes for a 11x15 pan for me.

Also....you could get a decent 11x15 pan at Michaels.
