Sooooo....if you were suddenly being told that the total number of people has now almost doubled....would you just double the amount you are making OR would you add other items?

I would agree with Justin. It's a lot easier to just make more of what you are already doing than to come up with more ideas. Your menu looks lovely BTW. No wonder your having a good turn out!

One more item to think about.
Deviled eggs are making a huge comeback. :twisted: Everyone loves these as well. You can buy eggs precooked and peeled from GFS Marketplace and I like to make different versions with the fillings. Some easy things to add are Crab & Old Bay, Bacon & Blue Cheese, Smoked Salmon & Fresh Dill, Ham & Cheddar and Pimento Cheese with Smoked Paprika. Good Luck!!!!!

Trisha-

I'm with Justin- just double the recipes with the same menu. You have a really good selection already and adding additional iotems wil make it too complicated. Plus you may not have room to put everything out.

When's the event again?

Deviled eggs are a good idea, i just hate the smell in the house when they are made. :? :? :?

I agree with just making more of what you have.... you dont want to become to overwhelmed with the prep since you mentioned you are the one making all the food.

I agree with everyone else- keep the same amount a produce more. An extra app or two will present itself when you get towards the end. Products that you have more than necessary always can be put together to form new, ad hoc dishes.

You can easily fascillitate this process by picking up a couple of baguettes for crostinis that you can top with virtually anything.

Everything went lovely. I did do some crostini too. Ended up with alittle over 50 people there, a few tha had rsvp did not show (that's fine. lol). My parents had a blast! I was exhausted. :)

OOPS!!!! Forgot to say....Thank you all for the advice and recipes!!!
