Ok, this is the coolest thing I have learned this year...

In Scandinavian households, they keep a 'pickling jar' that is used to preserve all of thier leftover scraps from cooking.

Simply put, a pickling brine that constantly sees an influx of edible flotsam and jotsam from the prep-cook process.

Shoot, you don't even have to cover the dang thing, as long as the material doesn't stretch over the water-line.

I recently learned not to place un-washed buffalo mozzarella, but otherwise, we're gold.

Zero waste, my absolute favorite thing!
