I know It has discussed in the forum before.
Where do get get one besides Karem's ?
The store @ Norton Common is not convenient.
FYI when in St Matthews they made a great breakfast...
Any help would be appreciated !

I know Kroger has carried Karems' Triangles in the past. Do you want their prepared triangle, or do you want an unmarinated tri-tip?

Are you from the West Coast, perhaps around San Diego? They love that cut- it's thier flank steak.

I think Karem's has made it a local tradition here, too, Stephen. I've never been that persuaded, but then, I'm a rib eye kind of guy.

Lol! I used to live in a loft on 9th and G in downtown San Diego. THere is also a restaurant connected to the building...they served sirloin triangle w/ port-shallot butter. YUM. I am now craving this restaurant. It was so tempting to never cook again :).

Cynthia,
I bought a tri-tip roast today from Harned Farms at the Norton Commons Farmers Market- They also sell at Beargrass in St. Matthews. I haven't eaten it yet, but all the beef I've purchased from them previously has been excellent. Highly recommend them.

Anybody have cooking recommendations for the 2 lb roast I bought?

Now that you mention it, my brother-in-law absolutely loves that thing. He used to have me cook it for him, fairly regularly. It comes premarinated and is labeled 'Karem's Triangle.' Pretty good, yet you can get one with a funny marbling once in a while...

Deb, speaking of marinating. This is a perfect cut for an injector...

Orange-Teriyaki Injected, Black Pepper Encrusted Tri Tip

The key is to get a good sear on the meat before moving it to an indirect, dry heat. Use the restaurant technique for a Black and Blue steak. One side of your grill should be as hot as you can make it and the other side at a medium heat/coal height. Place the roast (rubbed with Olive oil, salt and a lot of black pepper on the hot side. Drizzle a little oil and cause a flare-up to have the flames directly touch the meat. This kind of blackens the outside and gives a nice toasty crust. You have to mind the meat, though, to make sure it doesn't burn. Move to the medium side. Cover grill and cook to preference (I like a medium temperature for proper rendering of internal fat.)

Deb, I was off to Ikea, but I live right near where the Harned Farms truck is parked.

I have purchased their flank steak... it marinades and cooks beautifully.

That orange teriyaki marinade, what's in that ? Sounds super.
Any one else have a great marinade ? willing to share ?

This topic has been on hotbytes before, tri tip sirloin was possibly available at Costco & Sam's.
I refuse to pay any store to shop.
That was where I heard the Santa maria tri tip thing.

It's a simple recipe, if you don't decide to make your teriyaki sauce from scratch:

1 part freshly squeezed orange juice (choose bitter oranges or the firmest that you can find [enough sugar in teriyaki already])
3 parts teriyaki of choice

Incorporate and pass through a fine sieve, if you plan to use an injector.
