Beef cheeks

by TracyB » Wed Jul 28, 2010 8:28 am

Anyone a fan? We recently ran across some and Im trying to prepare them in different ways. Basically all I am doing now is braising them in stock, mirepoix, bay leaves, garlic & dried porcinis served with some roasted garlic polenta. They are so buttery and yummy. Just curious if anyone has tried them and by what method did you prepare them.

Sounds good. The first place I head at a pig roast is for the cheeks, I bet beef is just as good.

Just out of curiosity, Tracy, are you getting the beef cheeks locally? Farmers' market or grocery? This isn't a cut I'm accustomed to seeing around Louisville, and I wouldn't mind grabbing a couple myself!

Not sure if they still stock it, but I used to buy cheek meat at WalMart of all places - the Bashford Manor location. They sold them in vacuum sealed packages in the 'odd bits' part of the meat section next to the beef tongues and such.

Robin, actually found these at Walmart in Radcliff. They are with the beef tongue. I beleive they are packaged by Ruumba. I have a local butcher (Curran's Grocery in Meade Co) who is trying to locate some for me. I get fresh pork shanks from them for an unbelievable price...40 lb box for $30! When I called asking for fresh pork shank I really confused the butcher...he had to ask how I was preparing them...said he never had anyone ask for them!
