oyster inquiry

I have a craving for some good oysters. I know the old rule is dont eat oysters in months that dont contain an "R". The two reasons that I can find for this are...1 in the"old" days refrigeration was unreliable and made for suspect shellfish...2 oysters spawn in the summer and the texture of the meat is lacking. I understand now though, that many of the oysters on the market now are from oyster farms. These farms raise sterile oysters that dont spawn,resulting in good texture year round.
Has anybody scored any oysters lately that have been of good quality? I will call our area fish mongers and see what they have, just wanted to know if anybody had any info.
The tall one wants white toast, dry, with nothin' on it.
And the short one wants four whole fried chickens, and a Coke.

I know you are probably speaking of raw oysters, John but I had the best oysters I've ever had yesterday at the Blind Pig. The oyster fritters were sweet little dudes reminescent of apalachicolas suspended in a feathery casing of batter. Batter is the wrong term because that was minimal coating, just enough to trap the saltwater goodness and release it in a burst. Sided with a champagne dipping sauce they were fantastic.

Well, yes I am looking for raw. I have to say though, the fritters you describe seem like they may be another option for my oyster jones.

I love, love, love raw oysters. I miss living on the coast, and getting them all the time!

I had those at the Blind Pig when they first opened, and almost gagged at the consistency - definitely not for me! But some may enjoy them. Weird I know, considering I like raw oysters so much.

Champagne dipping sauce...sounds like a fine idea!

On a completely different topic- we tried an escargot ceviche garnish the other night. Yeah, not so much so. But a champagne-pickled oyster garnish might just work...

A raw bar offers oysters on the half shell, peel-your-own shrimp (still available despite the disaster in the Gulf) and more.

Oysters on the half shell were estimable, too, sea-fresh and sweet, without a hint of “fishy” scent.
