Suggestions for a good side

I am attending a very casual outdoor cookout. Im looking for ideas for a good side dish beside the usual blah suspects that appear year after year.

Gimme whatcha got!!!

Spicy Sweet Potatoes

2-3 Sweet Potatoes, peeled and cut into 1 inch chunks
2 T olive oil or enough to just coat
1 T thyme
1/2 tsp cayenne pepper
1/2 tsp cinnamon
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
Kosher salt & coarse pepper
1-2 tsp coarse sugar

Toss potatoes with olive oil, half the thyme, sugar, and spices.
Place potatoes on cookie sheet or in baking dish in a single layer.
Roast at 400 for 30 minutes, or until tender.
Finish with remaining thyme

You could make a grilled vegetable salad with a sundried tomato viniagrette. :D

Calling Linda B; calling Linda B. The Sweet Potato Salad that you brought to the "Welcome to Kentucky" off line would be a wonderful side. I can't find the recipe here on Hotbytes. Could you or one of the other forumites repost that recipe

Gina's Sweet Potato Salad
from Down Home with the Neeleys

Yield: 4 to 6 servings

Ingredients:
2 pounds sweet potatoes, peeled and cut into cubes
1/2 Vidalia onion, finely chopped
1 red pepper, seeded and finely chopped
4 green onions, thinly sliced
1/3 cup mayonnaise
2 tablespoons orange juice
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
Salt and freshly ground black pepper


Directions:
Add the sweet potatoes to a large pot of cold salted water. Bring to a boil over medium-high heat and cook the potatoes until tender, about 15 minutes. Drain the potatoes and let cool in a colander.

Once the potatoes are cool, transfer to a large serving bowl and add the onion, red pepper, and green onions.

In a separate bowl, add the mayonnaise, orange juice, smoked paprika, cumin and salt and pepper, to taste. Whisk to combine, pour over the potatoes and thoroughly mix. Serve immediately or refrigerate for 1 hour for the flavors to meld.

Here is Linda's recipe. It would be a wonderful and unusual side.

LINDA’S SWEET POTATO SALAD

Here's my new favorite salad (I make the bean-onion mixture without the tuna or greens). I never would have guessed how beautifully these ingredients go together!

I always do grilled goat cheese when I'm grilling. Make some little aluminum foil "boats" and drop in quarter inch slices of goat cheese, top with almost anything...herbs, honey, dried maters, figs, grapes, whatever. Just drop the boats on the grill for a couple of minutes. Super easy.

DanB Im with ya on that idea. I do a fig jam & goat cheese flat bread on the grill and its just the best!
