Asparagus.......

......what now?

Our family had never had asparagus, so i bought a small bunch a couple of weeks ago. I didn't really know what to do with it, so.....i did the only thing i felt was a sure thing: BACON! (I always tell my younger daughter, who loves to cook with me: If you are ever in doubt, butter, bacon, or cheese!) I trimmed off the bottoms, they looked rather tough and that is what i do with broccoli. Then i tossed them with a little bit of olive oil and S&P; i took about three and then wrapped them in bacon, then grilled them outside.

We LOVED it! It was sort of like broccoli, but not, a milder flavor. They were still crunchy, very, very good.

i bought some more yesterday, two huge bunches this time, and was wondering what else i can do with it.

I am grilling tomorrow so grill suggestions are cool too.......

Hi Becky!

You can't beat asparagus steamed! We make a sauce of melted butter and soy sauce and drizzle it over top.

You can slice it very thin for salads.

Stir fry with it sliced with a bunch of veggies.

Hey Ed, thanks for mentioning that you can put it in salads. I was wondering if i could put it in my salads. I have been trying to eat salads for lunch everyday and before dinner, but they have become boring. NOT a diet, just trying to eat healthier. And i have been wanting to change them up.

as i have been reading up on it, melted butter seems to be a constant. I have veggies for a stir-fry, so will try that as well.

can also blanche it and toss on the grill, get nice grill marks. then while still very hot, toss with some garlic, salt and pepper...very simple, very good!

rather than cutting the ends, especially on the larger stalks, just bend it from the end until it snaps...you'll avoid any tough, fiberous parts and the ends can be saved/frozen for stock or cream of asparagus soup. good for casseroles in place of cream of chicken/mushroom.

my dad used to make a sinful dish that had asparagus, crab and a cream sauce topped with melted swiss cheese...oh for the days when calories were not a thought!

Grilled is the best. Also good roasted with olive oil, pepper and a bit of parmigiano reggiano.

If you roast it as TP suggested, try wrapping a slice of Prosciutto around each spear as soon as it comes out of the oven.
The tall one wants white toast, dry, with nothin' on it.
And the short one wants four whole fried chickens, and a Coke.

I usually do asparagus w/ Hollandaise sauce (it's relatively easy to make a decent one). It's also quite good in quiche (just lie them down on the crust & have one end touching the outer crust & the other ends all touching in the middle).

Simply tossed with olive oil, salt, and pepper then grilled. It is my go to side with almost any grilled meat.

Becky, I love it grilled but I don't have one so I like to roast it at 450 in a little bit of olive oil until it gets some char on it. Most folks would say that overcooks it, but I LOVE it. Seriously, I have had it almost every night for two months.

But other that that--it is a go to vegetable for me when I am making anything with eggs. Asparagus and eggs just go together. Try some with onions and mushrooms in your next omelet.

It's worth noting, however, that this appears to be a genetic issue that affects some people but not others. Now scientists are debating whether the difference is that not everybody PRODUCES mercaptan-scented urine after ingesting asparagus, or whether everybody does it but not everybody can SMELL it.

Very interesting. I never researched the reason behind the smell.

I just didn't want the new asparagus eater to make an unnessary trip to the Dr. :lol:
