Peach/Habanero BBQ Sauce - A Recipe for you

I don't presume to be an expert in BBQ...more like an aficionado. That being said I have had some pretty good luck using this sauce recipe, so in the spirit of "nothing is secret" I thought I'd share it. It's nothing fancy but this recipe did win the rib category at a Minnesota State BBQ Championship a couple of years ago and (most recently) placed 5th out of 54 teams in the sauce category at a Tennessee State Championship.

2 Bottles of Cattleman's Classic BBQ Sauce
1 lg can of peaches, including the juice - Pureed to liquid.
3 tablespoons of Turbinado sugar (higher burning point than other sugars)
2 tablespoons Black (sweet) molasses.
1 tablespoon of Apple Cider Vinegar (optional)
2 tablespoons of Tabasco Brand Habanero Sauce (or to taste).

Combine all ingredients, put on the stove top at a very low setting and heat just until sauce is warm (do NOT boil or it will become dark and bitter). Transfer to a suitable container and place in the fridge. I have kept this sauce in the fridge for up to a month with no ill effects but use your judgment because it does have perishable fruit in it.

OK, so I'm gonna try this on some grilled wings this weekend. Steve, any suggestions on what to put on the wings before putting on the grill? Just S&P, or nothing, or can I marinate them in the sauce?

Adam,

I didn't rub the last batch of these with anything and they came out fine. That being said I've got a jar of mild jerk seasoning I'm going to try on the next batch. BTW, indirect heat is the key here...

They sell a pretty large bag of that Turbinado sugar at Costco for $6 or $7.

It's also sold at Krogers, etc...It's in a brown 1 or 2 pound box and I believe it's labeled "Natural Sugar".

BTW, the sauce recipe also works extremely well with canned apricots. I imagine other fruits could be substituted as well but quite frankly I've never been trilled with blueberry's, strawberry's, etc in my BBQ sauce and the few I've tried have been kinda lame.

WONDERFUL sauce, Steve! Put it on grilled chicken twice this week and tonight I put a homemade rub on some spare ribs to be indirect grilled tomorrow evening and finished with this sauce. I actually made the whole recipe and split the sauce into two bowls, only adding habanero hot sauce to one bowl since my mother is very sensitive to heat; I gotta say even without the hot sauce added that this is a wonderful BBQ sauce. Thanks again, Steve!

Great sauce - I made some this weekend.

I took bone-in, skin-on chicken breasts and thick, bone-in pork chops and seasoned them lightly with salt. I made a scorching hot zone, and a not-that-hot zone on the grill (lump charcoal). Gave 'em about 4 minutes/side in the scorch zone, and moved them to the indirect heat; then basted with some sauce. Turned them every 5 minutes (3 turns), basting with each turn.

Good stuff. Thanks for the recipe.

Hey Steve, I printed off this recipe and going to try my hand at it. Going to slow cook ribs for a few hours and baste them with this BBQ sauce. I'll tell you how they turn out tomorrow.

Also on my cookout menu will be Surly Furious Drunken Chicken, Marinated Filet Mignon, Buffalo Chili, Kingsley's handmade polish sausage, and twice baked potatoes. I hope everyone comes hungry!

your menu sounds good. i was going to bbq today but the rain made me :( :( :(
