I've lived in both Chicago and New Jersey, and I've made bagels I thought were good from the
www.kingarthurflour.com site. The recipe is called Mini bagels, but I made them regular size and baked somewhat longer. If you need some barley
malt, please Pm me- I have plenty to share.
Haven't done whole grain/wheat flour yet- if you find a good recipe will you let us know?
The book "Artisan bread in 5 mins" is fantastic ( and I've made bread for years). Highly recommend! Thanks for the suggestion- I'll have to try that recipe too.
