Need a recipe using Bush's Beans

One of the BBQ contests we've entered this year is sponsored by (among others) Bush's Beans. As a result there is an ancillary competition category called "Anything Bush's Beans"...I'd really appreciate hearing any creative ideas and/or recipes using Bush's beans as one of the ingredients (Beans don't even have to be the main ingredient...The recipe just has to contain some kind of Bush's beans).

One of the ideas/recipes we've been playing with is a very nice Caribbean style Black Bean/Mango/Corn Salsa recipe. We mixed up a vat of it last night and while it was very good I'd really like to consider other ideas before pulling the trigger on this one. The dish can either be completed "on site" or at home...if made at home it needs be something that "travels well", if made on site it needs to be something that can be made using some very basic stove top facilities.

Bean Pie

2 cups Navy Beans (cooked)
4 Eggs
1 14 oz. can evaporated milk
1 stick butter
1 teaspoon nutmeg
1 teaspoon cinnamon
2 T. Flour
2 cups Sugar
2 T. Vanilla
2 unbaked pastry shells

Cook beans until soft. Preheat oven. to 350 degrees. In electric blender, blend beans, butter, milk, eggs, nutmeg and flour about 2 minutes on medium speed. Pour mixture into a large mixing bowl. Add sugar and vanilla. Mix well. Pour into pie shells. Bake about one hour. until golden brown. Makes 2 or 3 Bean Pies.

I've been making these pies for 30 years or more. They are quick, easy and travel well. Delicious too! This is a surprising way to use beans. I like to serve mine warm or at room temperature.

Thanks for the replies ladies... both recipes sound great. We "practiced" a bit this weekend and decided this is the dish/presentation we're going with:

Caribbean Mango, Black Bean and Corn Salsa...We're talking "Mild, Medium, Hot and Suicidal" :D

Thank you Aneemarie...We'll work on the presentation a bit (garnish, etc) but otherwise I think we've got something that will at least get the judges attention. This category only pays the top three places and first place is only $250, so it's not like we have much more than "bragging rights" riding on this one.

BTW...ya'll should see our dish for the dessert category...secret for now...but it is dah bomb (pictures next time we make it).

Looks awesome. I'd just add a few cilanto sprigs around/on the chips for presentation. I'm assuming cilanto is in the salsa. Great idea with the various colored peppers.
