I just made these for the Colts game on Sunday. I used Steve P's Vienna dogs and basted them with Steve P's spicy bbq sauce the last few minutes.

Chorizo and Beef or chorizo beef. If chorizo beef, are you buying if somewhere are making it. I have never been able to find any chorizo other than traditional pork.

Both. Really, Sometimes, I'm not able to get it, but then get lucky on occasion and find some at a little known market.

At LEAST as good a AB's wings and less labor intensive:

Begin with raw, unfrozen wings. Bring a large pot of water to a boil, add wings and parboil for about 10 minutes (I usually start the "drummies" and then add the "flats' about 3 minutes later) After parboiling, rinse wings well in cold water, drain and place in a covered container in your fridge OVERNIGHT.

Parboiling gets rid of a lot of the fat and after resting in the fridge overnight you will find that the skin has become somewhat dehydrated with a leathery texture. This parboiling step is ensures a "crispy" skin when baked.

Preheat your oven to 350 and baked the wings for 15 to 20 minutes (or until they are done to your critieria). If you like your wings extra crispy place them under the broiler for a minute, maybe two.

Toss with your favorite sauce.

I've used this technique for years and haven't had any complaints.

So what'd ya think about that Head County "Hot" BBQ sauce ? Pretty darn spicy huh ? Not my favorite product they put out but if your a heat freak, it rocks pretty good.

It's good, but didn't set off the fire alarm. It worked well to balance the sweetness of the brown sugar. I'm think a "lesser" softer dog would be better for this recipe.

Blues Hog Tennesee Red is the stuff. I could drink it straight from the jar.
