I am using my new pan tonight for dinner. The oil even swirled differently in the pan, looks nice overall.

i am cooking chicken, it browned SUPER FAST! I am sure most of you will agree that when you cook so much, you kind of do not get burned as much when you touch something hot, just get used to it. Well, i placed the lid on the pan and then just sort of fixed it with my thumb.

Jeez did that freaking pan get super crazy freaking HOT!!!!!!

Scour cast iron with steel wool or bronze wool to clean the outside of it. They are pretty cheap to buy at yard and estate sales and easy to clean and rehab them. I got a nice 4 quart pot for my daughter for $10.

If you find one that is really messed up, put in oven and run cleaning cycle. Can't harm the cast iron but will usually clean up completely. Just don't take it out right away. It will be really hot. It will need to be seasoned a couple different times and good as new.

so does that mean that a rusted cast iron can be salvaged? i see a lot at thrift stores that are awful looking, which is why i dont ge them.

Surface rust is okay, but pitted rust is not.

my wonderful momma bought me a blue LC dutch oven a few years back and it is one of my most prized possesions. i use it for chilli, pot roast, deep frying, boiling pasta, jambalaya, soup, stew, bolognese...need i say more? it's heavy and roomy and it sears or simmers like nobody's business. having to handwash something so heavy is the only drawback i can think of, but i'm lazy about washing dishes of any weight.

mom bought the pot at marshall's in dixie manor and since then, i have frequently seen these pots at that location. marshall's, tj maxx, etc. are stores that you have to stay on top of. go in once a week or so and scour the shelves. i have scored so many great buys on the type of kitchen gear i used to think i couldn't afford to own. another favorite of mine is a beautiful and large bamboo cutting board i got for around 10 bucks. anyway, that's a bit off subject. point is, good things await you at marshall's and le crueset is the bomb-diggity!

You can clean rusted cast iron pretty easily.
