Beth- Thanks so much! I'll make it and let everyone know how it compares to Pauls as soon as I get over the awful thing which is going around. I have suspected there's buttermilk involved in Pauls' and cottage cheese could account for the texture. Marsha, you shifty-eyed siren, are you wearing that trench to cook in?

Amish blue cheese, if it exists, is hard to find. So far, it isn't at Whole Foods, Lotsa Pasta, Kroger, Meijer, Costco or the Liquor Barn. After the liquor barn I decided to go home and dr..think about it.

Oh no! I've found it at Kroger before with all the artisinal cheeses. (Highlands location and McMahan Plaza) It's in a little plastic bin. I want to say that the brand is "Salemville" but not sure. I've also found it at Sams and Costco. Good luck!
(I'm sure though that you can sub any type of blue cheese that you like and it will be good.)

Bethy, I was just at McMahan Plaza Kroger and they had a large selection of Amish Blue Cheese. There were two main brands: Salemville and Amablu. They had several sized containers of crumbled and several selections of block.
I also recall seeing it at the Westport/Hubbards Kroger.

Thanks Beth! I went to the one on Hubbard's Lane, but it's not the biggest so I'll try another Kroger. Can't believe I went all over town looking and all I had to do was check another Kroger, sheesh.

Love the Dressing! The Middletown Kroger had all the amish blue cheese one could ever want and I made the dressing this morning. Did it just like the recipe only with a little bit more garlic and a good bit more cheese. I whirled the cottage cheese and garlic a little in the food processor (because why? I don't know.) before stirring it into everything else. It's DE-licious, Thank you so very much.
Now, we can turn our attention to agent M. Has her cover been compromised? Did she leave her stiletto phone off the hook? Maybe she skipped off to fashion week in her trench coat and Jackie O. glasses...

Bethy, Sorry for the late reply.
I am the owner and manufacturer of Luna Mercato. As for the recipe posted, they have similar ingredients, but widely different in taste and porportions. I understand your movement and very sorry to hear. If you would like, there are two options for your taste. We are shortly coming out with 1-2 shelf stable dressings: (bourbon honey mustard, along with Smoky Thousand Island.) You can always get these online. If your wishing for the Amish Blue Cheese Dressing still, then this is something I can try my best to work with you to keep the cost down. I could work with you to try to overnight or ship a bulking 1 gallon to you. This will make the cost more effective with the over-night shipping cost during the summer. Please let me know if there is anything I can do to help.

Thanks, Marsha! I rushed right out and got a copy. It was the curried chicken salad, but that's good too. In the course of trying to copy the BBQ almond salad, I inadvertently got hooked on Cheddar Box cole slaw. What IS that spice that makes really good cole slaw really good, anyway?
BTW, Beth K, thanks again for that blue cheese dressing recipe. We're on our third batch and can't imagine how we lived without it before.
